Konfitura z cebuli

Konfitura z cebuli

Z domu wyniosłam, że co dała nam matka natura – nie może się zmarnować. Choć dzisiaj wszystko można kupić gotowe, to myślę że przetwory własnej produkcji, takie jak dżemy, konfitury czy musy zrobione w domu, bez sztucznych dodatków są zdrowsze i lepiej smakują.
Lata temu, będąc w obcym kraju, jadłam konfiturę z czerwonej cebuli. Bardzo mi wtedy smakowała i długo szukałam przepisu. Ostatnio znalazłam taki przepis w “Przyjaciółce”. Posłużył mi jako baza do przepisu, który tutaj wam podaję. Zmodyfikowałam go, pamiętając jeszcze trochę smak tamtej konfitury.

Składniki:
1 kg czerwonej cebuli
0,5 kg mięsistych pomidorów
1/2 szklanki czerwonego wina
3-4 łyżek octu balsamicznego
3 łyżki cukru
2 łyżki oliwy z oliwek
1 łyżka masła

Przyprawy:
liść laurowy, ziele angielskie, cukier trzcinowy, zioła prowansalskie
do smaku doprawić solą i pieprzem

Konfitura z cebuli własnej roboty

Wykonanie:
1 kg cebuli (może być zwykła lub czerwona) obrać, pokroić w kostkę, przesmażyć na maśle z olejem, posypać 3 łyżkami cukru, poddusić.
Pomidory obrać ze skórki, pokroić w kostkę i dodać do cebuli, dalej dusić na małym ogniu przez 10 minut.
Podlać czerwonym winem (wytrawnym lub słodkim). Dodać listek laurowy, szczyptę zmielonego ziela angielskiego i szczyptę ziół prowansalskich, dusić na małym ogniu, aż cebula będzie miękka, szklista i ściemnieje.
Pod koniec duszenia konfiturę doprawić octem balsamicznym. Gorącą napełnić słoiczki, zamknąć i trzymać w chłodnym miejscu.
