Czarny bez- Sambucus nigra

Wciąż żywa jest wiara w magiczną i mistyczną moc bzu.
Czarny bez wykorzystywany jest w medycynie i w kuchni.
Ze świeżych kwiatów bzu można robić wino, nalewkę/likier, lub z suszonych kwiatów bzu herbatkę.
Mają przyjemny, kwiatowy smak.
Owoce można zamrażać, ale po rozmrożeniu należy je gotować kilka minut.
Sprawdzają się też w deserach i wypiekach.
Jagody czarno bzu mają właściwości odżywcze, porównywalne z winogronami.

Zbiór i przechowywanie:
Kwiaty zbierać wcześnie, w suche (pozbawione rosy) poranki.
Rozłożyć na czystym papierze kuchennym i w ten sposób pozbyć się robaków.
Owoce należy zbierać, kiedy staną się czarne.

P.S.
Czarny bez nie powinien być stosowany przez kobiety w okresie ciąży i karmienia piersią.

Z myślą o jesieni i zimie!

Wprawdzie maj już się kończy i w ogrodzie wszystko poszalało, łąka ściele się dywanem żółtego mniszka. Nazbierałam samych kwiatów mniszka i zrobiłam miodek. Teraz czekam,aż zakwitnie czarny bez i zrobię tradycyjną nalewkę, pt. “Likier Bronci”. Miodek mniszka smakuje doskonale i jest łatwy w wykonaniu.

Likier “Bronci” z kwiatów Czarnego Bzu (Sambucus nigra)

Czerwiec to najlepszy czas, aby zbierać i suszyć kwiaty Czarnego Bzu. Bez wzmacnia i chroni cały organizm, oczyszcza go z toksyn i jest pomocny w zaparciach. Leczy także układ pokarmowy. Czarny Bez jest skarbnicą witaminy C, beta- karotenu i wielu cennych minerałów (wapń, cynk, selen). Z Bzu można robić różne mikstury, moją ulubioną jest nalewka “Bronci”, ma wyśmienity smak, zapach i bardzo prosty sposób wykonania. 

  • 10 dużych kwiatów
  • 1 litr wody
  • 10 g. kwasku cytrynowego
  • 300g. cukru
  • 750 ml. dobrej, czystej wódki

Kwiaty zalać litrem gotującej się wody, zostawić w tej zalewie na 24h., od czasu do czasu pomieszać. Po upływie 24h wycisnąć kwiaty mocno przez ścierkę, dodać 10g. kwasku cytrynowego, 300g. cukru i 750ml. dobrej, czystej wódki. 
Likier jest gotowy, ale dobrze, gdy poleżakuje w ciemnym, suchym miejscy przez kilka miesięcy. Im dłużej, tym lepiej.


P.S
Likier też można wykonać z suszonego Bzu, należy pamiętać, że susz jest dwa razy mocniejszy od świeżych kwiatów.  Proporcje: jedna szklanka świeżych kwiatów, to jedna filiżanka suszonych kwiatów Czarnego Bzu.
Likier jest tak pyszny, że można się zapomnieć, a wtedy nie ręczę za skutki.
